fa بررسی عوامل مؤثر بر میزان ضایعات نان خانوارها در شهر سنندج صنايع غذايي Food Science پژوهشي Research <span style="font-size:10pt"><span style="direction:rtl"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><span b="" lang="AR-SA" style="font-family:" titr="">سابقه و هدف:</span> <span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:">تغییر رفتار مصرف کنندگان به سوی مصرف پایدار مواد غذایی نیازمند شناسایی عوامل اقتصادی</span></span><span dir="LTR" style="font-size:9.0pt">-</span><span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:"> اجتماعی و رفتاری حاکم بر سبک زندگی آن‌ها است. به همین دلیل در این مطالعه عوامل اقتصادی</span></span><span dir="LTR" style="font-size:9.0pt">-</span><span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:"> اجتماعی و رفتاری مؤثر بر ضایعات نان خانوارهای شهر سنندج مورد بررسی قرار گرفت.</span></span><span lang="FA" style="font-size:11.0pt"><span style="font-family:"B Nazanin""></span></span></span></span></span></span><br> <span style="font-size:10pt"><span style="direction:rtl"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><span b="" lang="AR-SA" style="font-family:" titr="">مواد و روش</span><span dir="LTR" style="font-size:9.0pt">‌</span><span b="" lang="AR-SA" style="font-family:" titr="">ها:</span> <span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:">جامعه آماری این تحقیق، مصرف کنندگان نان در شهر سنندج (خانوارها) می‌باشند؛ با استفاده از روش نمونه‌گیری تصادفی ساده تعداد 304 پرسشنامه از مصرف کنندگان نان شهر سنندج جمع‌آوری شد و عوامل مؤثر بر میزان ضایعات نان خانوارها با استفاده از مدل لاجیت ترتیبی مورد بررسی قرار گرفت. اطلاعات مورد نیاز این تحقیق از طریق تکمیل پرسشنامه نیمه ساختاریافته محقق‌ساخته گردآوری شد و برای توصیف داده‌ها و برآورد مدل لاجیت ترتیبی از نرم افزار </span></span><span dir="LTR" style="font-size:9.0pt">STATA MP17</span><span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:"> استفاده شد.</span></span><span lang="AR-SA" style="font-size:11.0pt"><span style="font-family:"B Nazanin""></span></span></span></span></span></span><br> <span style="font-size:10pt"><span style="direction:rtl"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><span b="" lang="AR-SA" style="font-family:" titr="">یافته</span><span dir="LTR" style="font-size:9.0pt">‌</span><span b="" lang="AR-SA" style="font-family:" titr="">ها</span><span dir="LTR" style="font-size:9.0pt">‌</span><span b="" lang="AR-SA" style="font-family:" titr="">:</span> <span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:">نتایج نشان داد که متغیرهای سن، باور به اثرگذاری مصرف زیاد نان بر افزایش وزن، رضایت از کیفیت نان و اهمیت قیمت نان برای خانوارها با احتمال ایجاد ضایعات نان رابطه عکس داشته‌اند. همچنین در صورتی‌که نوع نانوایی محل خرید خانوار آزادپز بوده احتمال ایجاد ضایعات نان توسط خانوار کاهش یافته است. این در حالی است که متغیرهای تحصیلات سرپرست خانوار، اندازه خانوار، درآمد و زمان صرف شده برای خرید نان با احتمال ایجاد ضایعات نان رابطه مستقیم داشته‌اند.</span></span></span></span></span></span><br> <span style="font-size:10pt"><span style="direction:rtl"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><span b="" lang="AR-SA" style="font-family:" titr="">نتیجه گیری:</span> <span lang="FA" style="font-size:11.0pt"><span b="" nazanin="" style="font-family:">با توجه به نتایج تحقیق، آزادسازی قیمت نان و توسعه نانوایی‌های آزادپز در منطقه مورد مطالعه پیشنهاد می‌شود؛ در این صورت، علاوه بر اینکه میزان ضایعات نان خانوارها به طور قابل توجهی کاهش می‌یابد، کیفیت نان تولید شده هم بهبود پیدا می‌کند و رفاه مصرف کنندگان و تولید کنندگان نان در جامعه مورد بررسی افزایش می‌یابد.</span></span><span lang="AR-SA" style="font-size:11.0pt"><span style="font-family:"B Nazanin""></span></span></span></span></span></span> <span style="font-size:10pt"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><b>Background and Objectives:</b> <span style="background:white">Changing consumer behavior towards sustainable food consumption requires identifying the socio-economic and behavioral factors that govern their lifestyle. For this reason, this study examined the socio-economic and behavioral factors affecting bread waste in households in Sanandaj.</span></span></span></span><br> <span style="font-size:10pt"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times="">&nbsp;<span class="hps" new="" roman="" style="font-family:" times=""><b>Materials & Methods:</b></span> The statistical population of this study is bread consumers in the city of Sanandaj (households); <span style="background:white">using simple random sampling method, 304 questionnaires were collected from bread consumers in Sanandaj city and the factors affecting the amount of household bread waste were investigated using the ordered logit model. The information required for this study was collected by completing a researcher-made semi-structured questionnaire and STATA MP17 software was used to describe the data and estimate the ordered logit model.</span></span></span></span><br> <span style="font-size:10pt"><span style="unicode-bidi:embed"><span new="" roman="" style="font-family:" times=""><b>Results:</b> <span style="background:white">The results showed that the variables of age, belief in the effect of excessive bread consumption on weight gain, satisfaction with bread quality, and the importance of bread price for households had an inverse relationship with the probability of producing bread waste. Also, if the type of bakery where the household purchase bread was</span> <span style="background:white">non-subsidized, the probability of household bread waste has been reduced.
