Evaluation of the Effect of Chia Seed Mucilage and Carboxymethyl Cellulose Composite Containing Epsilon-Poly-L-Lysine and Encapsulated Thymus daenensis Essential Oil with Beta-Cyclodextrin on the Microbial and Chemical Properties of Chicken Fillet Under Cold Conditions

Background and Objectives: This study aimed to develop a composite coating of chia seed mucilage/carboxymethyl cellulose containing encapsulated Thymus daenensis essential oil with beta-cyclodextrin and epsilon-poly-L-lysine and their effect on the shelf life of chicken fillets.
Materials & Methods: Chicken fillets were coated with an edible suspension of chia seed mucilage (1.5%)/carboxymethyl cellulose (1%) containing the encapsulated essential oil (2%) and epsilon-poly-L-lysine (0.5%) alone and in combination. Then, they were kept for 8 days in the refrigerator for microbial, chemical, and sensory evaluations.
Results: The results indicated that the increase in the microbial counts in the coated samples with a composite containing encapsulated essential oil and epsilon-poly-L-lysine was significantly controlled compared to ones without antimicrobial compounds. The evaluation data of thiobarbituric acid, volatile nitrogen bases, pH, and sensory tests indicated the agreement of chemical and organoleptic changes with microbial evaluations of the samples during the storage period in such a way that the least changes were observed in the treatment containing encapsulated essential oil and epsilon-poly-L-lysine.
Conclusion: The combined use of Thymus daenensis essential oil and epsilon-poly-L-lysine in the edible coating of chia seed mucilage/carboxymethyl cellulose effectively maintained the quality and safety of chicken fillets in cold conditions, demonstrating the high potential of natural additives in the food industry.
