Investigating Factors Affecting the Amount of Household Bread Waste in Sanandaj City

Background and Objectives: Changing consumer behavior towards sustainable food consumption requires identifying the socio-economic and behavioral factors that govern their lifestyle. For this reason, this study examined the socio-economic and behavioral factors affecting bread waste in households in Sanandaj.
 Materials & Methods: The statistical population of this study is bread consumers in the city of Sanandaj (households); using simple random sampling method, 304 questionnaires were collected from bread consumers in Sanandaj city and the factors affecting the amount of household bread waste were investigated using the ordered logit model. The information required for this study was collected by completing a researcher-made semi-structured questionnaire and STATA MP17 software was used to describe the data and estimate the ordered logit model.
Results: The results showed that the variables of age, belief in the effect of excessive bread consumption on weight gain, satisfaction with bread quality, and the importance of bread price for households had an inverse relationship with the probability of producing bread waste. Also, if the type of bakery where the household purchase bread was non-subsidized, the probability of household bread waste has been reduced. However, the variables of education of household head, household size, income, and time spent buying bread had a direct relationship with the probability of producing bread waste.
Conclusion: According to the research results, it is recommended to liberalize the price of bread and develop non-subsidized bakeries in the study area; in this case, in addition to significantly reducing the amount of household bread waste, the quality of the bread produced will also improve and the welfare of bread consumers and producers in the studied community will increase.
